The sweet rich apricots and Valencia oranges that grew in the trees near my home in California motivated me to create this vibrant jam. The delightfully contrasting flavors of sweet and citrus are spirited and satisfying.
This jam makes a wonderful glaze for roast chicken, duck, or pork. For an astonishing risotto, be daring and add a dollop to the mixture.
