Young Pasilla peppers are dark green in color, and turn brown upon maturing, used in a variety of traditional Latin dishes including mole sauce and chile rellenos. Roasting gives the Pasilla a smoky, earthy flavor that can be combined with fruits and served with duck, seafood or lamb. For an interesting flavor, add fresh Pasilla peppers to your enchilada sauce.
