Ingredients
- For the Salmon:
- 4 salmon fillets, 7 oz. each, skin removed
- 2 tbsp. lemon pepper
- 1 dash Virgin Olive Oil
- 1 dash Sea salt
- For the Dressing:
- 1 red pepper, roasted, peeled, seeded, and finely diced
- 1⁄2 red onion, finely diced
- 1 tsp. baby capers, salted, well rinsed and drained
- 2 1⁄2 oz. Italian (flat leaf) parsley, finely shredded
- 2 limes, juiced
- 1 dash Sea - salt
- 1 dash Freshly ground pepper
- 2 oz. extra virgin olive oil
Directions
- Preheat the barbecue to hot. Make sure the grill bars are clean.
- Brush the salmon fillets with extra virgin olive oil and season with lemon pepper.
- Put the fillets presentation side down on the grill and cook for 2 minutes; turn over and cook for another 2 minutes.
- Remove the fish from the barbecue and rest for 1-2 minutes in a warm place; this will give you medium-rare salmon. For more well cooked salmon, grill an additional minute each side.
- To make the dressing, mix all ingredients together in a small bowl.
- Place one salmon fillet on each of four large plates. Top with a generous tablespoon of dressing and serve immediately.
