BBQ Lemon Pepper Salmon

Ingredients

  • For the Salmon:
  • 4 salmon fillets, 7 oz. each, skin removed
  • 2 tbsp. lemon pepper
  • 1 dash Virgin Olive Oil
  • 1 dash Sea salt
  • For the Dressing:
  • 1 red pepper, roasted, peeled, seeded, and finely diced
  • 1⁄2 red onion, finely diced
  • 1 tsp. baby capers, salted, well rinsed and drained
  • 2 1⁄2 oz. Italian (flat leaf) parsley, finely shredded
  • 2 limes, juiced
  • 1 dash Sea - salt
  • 1 dash Freshly ground pepper
  • 2 oz. extra virgin olive oil

Directions

  • Preheat the barbecue to hot. Make sure the grill bars are clean.
  • Brush the salmon fillets with extra virgin olive oil and season with lemon pepper.
  • Put the fillets presentation side down on the grill and cook for 2 minutes; turn over and cook for another 2 minutes.
  • Remove the fish from the barbecue and rest for 1-2 minutes in a warm place; this will give you medium-rare salmon. For more well cooked salmon, grill an additional minute each side.
  • To make the dressing, mix all ingredients together in a small bowl.
  • Place one salmon fillet on each of four large plates. Top with a generous tablespoon of dressing and serve immediately.
