Non-Dairy Vanilla Ice Cream with No Ice Cream Maker
This creative recipe calls for tofu and non-dairy creamer. It may sound odd, but it’s surprisingly creamy and delicious!

Ingredients
- 20 oz. vanilla coconut milk yogurt alternative
- 1 package Simple Truth Organic® Firm Tofu
- 1 tsp. Private Selection® Pure Vanilla Extract
- 1⁄2 cup Kroger® Pure Cane Granulated Sugar
- 1 cup dairy-free half & half
- 1 can coconut cream, liquid drained
- 1 tsp. vanilla paste (optional)
Directions
- In a food processor, combine yogurt, tofu and vanilla.
- Pour into shallow pan and freeze for 45 minutes to 1 hour.
- Return to food processor with half-and-half and drained coconut cream. Blend until smooth and pour into container to freeze for 1 to 2 hours minimum. Serve, freezing any leftovers.
