Spaghetti Aglio e Olio

Made with just a few ingredients, this classic Italian dish is a quick and satisfying meal that’s perfect any night of the week.

Ingredients

  • 1 box (12 oz.) spaghetti
  • 1⁄3 cup extra-virgin olive oil
  • 8 cloves garlic, thinly sliced
  • 1⁄4 tsp. red pepper flakes
  • Salt
  • Freshly ground black pepper
  • 1⁄4 cup chopped, fresh parsley
  • 1 lemon, zested
  • Grated Parmesan cheese (optional)

Directions

  • Bring large pot of salted water to a boil. Cook spaghetti according to package directions. Reserve about 1 cup pasta water, then drain.
  • While pasta is cooking, in large skillet over medium heat, combine oil, garlic and red pepper flakes. Cook, stirring often, until just beginning to turn golden, 2–3 minutes. Be careful not to let garlic burn.
  • Add drained spaghetti to skillet, and toss to evenly coat. Add reserved pasta water a little at a time, stirring until desired consistency is reached.
  • Season with salt and pepper, to taste. Stir in parsley and lemon zest.
  • Serve immediately, topped with cheese, if desired. Refrigerate any leftovers.
